- Creamy Avocado: Diced up for some healthy fats.
- Organic Seasonings: Garlic powder, sea salt, & black pepper.
- Organic Avocado Dressing: It’s creamy, herby, & the perfect dressing!

- Quinoa. Prepare quinoa as instructed from the package.
- Chickpeas & Cauliflower. Preheat the oven to 425 degrees F. On a baking sheet, add the drained chickpeas, cauliflower florets, avocado oil, & seasonings. Toss well to evenly coat. Transfer to the oven & bake for 20 – 25 minutes, flipping halfway.
- Creamy Avocado Dressing. To a high-speed blender, food processor, or using an immersion blender, add all of the dressing ingredients & blend until smooth. If needed, add more spring water to achieve a thick, yet creamy consistency.
- Assemble. Divide the fresh greens & chopped cucumber between bowls. Top with the cooked quinoa, chickpea croutons, roasted cauliflower, diced avocado, a sprinkle of pumpkin seeds, & red pepper flakes. Pair with the avocado dressing. Enjoy!
