How To Make
- Quinoa. Prepare quinoa as packaged instructions.
- Roasted Vegetables. Preheat the oven to 425 degrees F & line a sheet pan with parchment paper. On one side, toss the cauliflower florets with the seasonings & avocado oil. On the other side, toss the halved potatoes with the seasonings & avocado oil. Top with sliced lemons & bake for 20 – 25 minutes, flipping halfway.
- Avocado Goddess Sauce. To a high-speed blender or a food processor, add the sauce ingredients & blend until smooth. If needed, add more spring water to achieve a thick, yet creamy consistency.
- Serve. Divide the quinoa & roasted vegetables between bowls. Pair with the avocado goddess sauce & enjoy!

- Sea salt & black pepper, to taste
- ¼ cup spring water, plus more to thin
