- Organic White Quinoa: To provide the bowl with a nutty flavor, along with protein & fiber. You can use any color that you have on hand—white, red, or multi-color.
- Organic Cauliflower Florets: Fresh or frozen!
- Organic Yellow Baby Potatoes: These small potatoes, often referred to as new potatoes, are the perfect addition to add some heartiness.
- Organic Spicy Honey Mustard: A yummy combination of raw tahini, honey, Dijon mustard, fresh lemon juice, chipotle chili powder, cayenne pepper, sea salt, & black pepper.
- Organic Avocado: It’s the perfect creamy topping to mellow out the spicy honey mustard!
- Organic Fresh Herbs: Cilantro, dill, basil, or whatever you have on hand!
- Organic Greens: Any greens work great. Baby spinach, arugula, chard, and/or massaged kale.
- Organic Avocado Oil: This is my favorite oil to use while baking because it can withstand high temperatures.

How to Make
- Quinoa. Prepare quinoa as instructed on the package.
- Roasted Vegetables. Preheat the oven to 425 degrees F & line a sheet pan with parchment paper. On one side, toss the cauliflower florets with the seasonings & avocado oil. On the other side, toss the potatoes with the seasonings & avocado oil. Bake for 20–25 minutes, flipping halfway.
- Spicy Honey Mustard. In a mixing bowl, add the ingredients & whisk to combine. Add the water a little at a time until a semi-thick, pourable concoction is achieved. Set aside.
- Serve. Divide the fresh greens, quinoa, roasted vegetables, avocado, & fresh herbs between bowls. Pair with the spicy honey mustard & enjoy!

Storing & Reheating

Storage. Transfer ingredients to separate airtight glass containers. I don’t recommend slicing the avocado until the bowl is ready to be enjoyed.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the roasted vegetables & cooked quinoa to an oven-safe bowl. Place in the oven for 10–15 minutes, until warmed through. To serve, pair with the remaining bowl ingredients.

- 1 tbsp Manuka honey or local raw unfiltered honey or pure maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- ½ tsp chipotle chili powder
- ¼ tsp cayenne pepper
- Sea salt & black pepper, to taste
- Spring water, to thin
BOWL
- Fresh greens of choice
- Fresh herbs
- Avocado(s)
