- Organic Red Lentils: Red lentils are a staple when it comes to making curry. You cannot substitute black, green, or brown lentils here, because they will cook very differently. Oh and be sure to rinse your lentils before adding them to the pot.
- Organic Quinoa: You can use any color that you have on hand – white, red, or multi-color quinoa all work for this recipe.
- Organic Vegetables: Yellow onion, carrots, diced tomatoes, and baby spinach, is what I used, but it’s completely customizable!
- Organic Low-Sodium Vegetable Broth: Any broth truly works and even spring water, if you’re in a pinch!
- Organic Full-Fat Unsweetened Coconut Milk: This is essential to make the curry creamy. I don’t recommend subbing for regular non-dairy milk and be sure that your coconut milk comes from a can, not the carton. My favorite brand is Native Forest.
- Organic Spices: Curry powder, ground cumin, turmeric powder, sea salt, and black pepper, are the spices used in this healthy vegan curry recipe.
How To Make
- Sauté. In a large pot, heat over medium heat. Add the onion, carrots, bell peppers, and garlic. Sauté for 3 – 4 minutes. Add the spices and stir until well combined. Next add, the rinsed lentils, dry quinoa, diced tomatoes, coconut milk, and broth or spring water. Simmer for 20 minutes, covered, until the lentils and quinoa have softened.
- Add Spinach. Stir in the spinach and cook until wilted, about 2 minutes.
- Serve. Serve hot and garnish with fresh cilantro, if desired. Enjoy!

- 1 yellow onion, chopped
- 2 large carrots, sliced
- 2 garlic cloves, minced
- ¾ cup dry red lentils, rinsed
- ½ cup dry white quinoa
- 1 (18.3-oz) can diced tomatoes, Jovial brand
- 2 cups low-sodium vegetable broth or spring water
- 1 (15-oz) can full-fat unsweetened coconut milk
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground turmeric
- Sea salt & black pepper, to taste
- 2 cups baby spinach
SERVING
- Fresh cilantro
