This Mexican Red Kidney Bean & Guacamole Salad is a straightforward-to-make recipe that is ready in 15 minutes. It includes marinated red kidney beans, fresh pico de gallo, & homemade guacamole.

How to Make
- Marinated Beans. Whisk all marinade ingredients in a mixing bowl until well combined. Add the drained beans to the marinade & set for at least 10 minutes, chilled or at room temperature.
- Pico de Gallo. Add all the pico ingredients to a mixing bowl & mix until well combined.
- Guacamole. In a medium-sized bowl, prepare the guacamole by mashing ripe avocado(s) with the remaining ingredients. I like mine on the chunky side.
- Serve. Divide the greens of choice, marinated beans, pico de gallo, & guacamole between bowls. Top with extra fresh cilantro & red pepper flakes, if desired. Enjoy!

- 2 (15-oz) cans red kidney beans
- 2 tbsp extra-virgin olive oil
- 2 tbsp fresh lime juice
- 2 garlic cloves, minced
- ½ tsp chili powder
- ¼ tsp ground cumin
- ¼ tsp smoked paprika
- Sea salt & black pepper, to taste
PICO DE GALLO
- 1 Roma tomato or ½ cup cherry tomatoes, diced
- ¼ red onion, diced
- ¼ cup fresh cilantro, chopped

GUACAMOLE
