- Organic Yellow Baby Potatoes: These small potatoes, often referred to as new potatoes, are the perfect addition to add some heartiness.
- Organic Honey Mustard: A yummy combination of raw tahini, honey, Dijon mustard, fresh lemon juice, apple cider vinegar, sea salt & black pepper.
- Organic Avocado: For some extra healthy fats & creaminess, be sure to use a ripe avocado.

- Quinoa. Prepare quinoa as instructed on the package.
- Chickpeas & Vegetables. Preheat the oven to 425 degrees F & line a sheet pan with parchment paper. Toss the chickpeas & vegetables with the seasonings & avocado oil. Bake for 20–25 minutes, flipping halfway.
- Honey Mustard. In a mixing bowl, add the ingredients & whisk to combine. Add the water a little at a time until a semi-thick, pourable concoction is achieved. Set aside.
- Serve. Divide the fresh greens, quinoa, crispy chickpeas, roasted vegetables, avocado, pumpkin seeds, & herbs between bowls. Pair with the honey mustard & enjoy!

Storing & Reheating
This Honey Mustard Chickpea Power Bowl is the perfect plant-based recipe for healthy leftovers & meal prep!
Storing. Transfer ingredients to separate airtight glass containers. I don’t recommend slicing the avocado until the bowl is ready to be enjoyed.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the crispy chickpeas, roasted vegetables, & cooked quinoa to an oven-safe bowl. Place in the oven for 10–15 minutes, until warmed through. To serve, pair with the remaining toppings.

- 1 (15-oz) can chickpeas, drained
- 1 cup baby potatoes, quartered
- 2 large carrots, sliced diagonally
- 2 cups broccoli florets, fresh or frozen
- ½ tsp garlic powder
- Sea salt & black pepper, to taste
- 2 tsp avocado oil
HONEY MUSTARD
- 2 tbsp raw tahini
- 2 tbsp extra-virgin olive oil
- 1 tbsp Manuka honey or local raw unfiltered honey or pure maple syrup
- 1 tbsp Dijon mustard
- 1 ½ tsp fresh lemon juice
- 1 ½ tsp apple cider vinegar
- Sea salt & black pepper, to taste
- Spring water, to thin
BOWL
- Fresh greens of choice
- 2 tbsp pumpkin seeds
- Fresh herbs
- Avocado(s)
