This creation in particular was influenced by Platings and Parings Chickpeas and Avocado Salad, but I modified it to my liking & thought it was worthy of sharing!
As the name implies, this Guacamole-Inspired Chickpea Salad includes the classic dip add-ins, but with a plant-protein twist. Thanks to the inclusion of chickpeas, it adds some extra heartiness & fiber.
