Ingredients
- Organic Pinto Beans: Full of healthy fats & plant-based protein.
- Organic Cauliflower Rice: Cauliflower rice isn’t technically rice, but it looks like it while being packed with nutrition. You can find organic pre-made cauliflower rice at your local health food store.
- Organic Green Enchilada Sauce: My current favorite brand is Siete Foods.
- Organic Vegetables: For some extra nutrition, we’ll be including a yellow onion & green bell pepper.
- Organic Lime: Just a squeeze to elevate the flavors.
- Organic Spices: Ground cumin, smoked paprika, chili powder, sea salt & black pepper.
- Organic Toppings: Optional. I garnished with avocado & fresh cilantro.
- Organic Avocado Oil: Avocado oil is my go-to cooking oil because it’s neutral in flavor & it can be used to cook at high-heat temperatures.

How to Make
- Sauté the Veggies. In a large skillet, add the avocado oil, chopped onion & bell pepper. Sauté for 3–5 minutes.
- Cauliflower Rice. Once the veggies are soft, add the cauliflower rice & cook until defrosted.
- Enchilada Mixture. Next, stir in the drained pinto beans, enchilada sauce, the spices, fresh lime juice, & cilantro. Mix until well combined.
- Assemble. Divide the enchilada rice between bowls. Serve with avocado & fresh cilantro, if desired. Enjoy!

Tips for Making this Enchilada Rice Perfectly
- Organic Green Enchilada Sauce: I used green, but you can certainly use red. My current favorite brand is Siete Foods.
- Organic Pinto Beans: If you don’t have organic pinto beans, organic black beans will also work.
- Heat: Feel free to swap the organic green bell pepper with an organic jalapeño.
Storing & Reheating
As mentioned above, this Green Enchilada Cauliflower Rice is the perfect healthy vegan recipe for leftovers & meal prep!
Storing. Transfer the enchilada skillet mixture to an airtight glass container. Refrigerate for up to 4 days.
Reheating. To reheat, transfer the enchilada mixture to a saucepan. Heat over the stove until warm, adding water as needed.

- 1 tsp avocado oil
- 1 yellow onion, chopped
- 1 green bell pepper, diced
- 2 cups frozen cauliflower rice
- 1 (15-oz) can pinto beans
- 1 cup green enchilada sauce
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- Sea salt & black pepper, to taste
- 2 tbsp fresh lime juice
- ½ cup fresh cilantro, chopped
OPTIONAL TOPPINGS
- Avocado(s)
- Fresh cilantro
Instructions
