The Fall Salad You’ll Want to Enjoy All Season Long
- Packed with Fall Flavors: Roasted veggies and crisp apples bring all the best tastes of the season to every bite.
- Completely Plant-Based & Vegan: Perfect for those embracing clean eating this autumn.
- Flexible & Filling: Works well as a quick weeknight side, nourishing meal prep, or a show-stopping dish for holiday celebrations.

Ingredients
- Organic Quinoa: Adds a nutty flavor and provides protein and fiber. Use white, red, or tri-color—whatever you’ve got works excellently.
- Organic Sweet Potato: Keep the skin on to boost the nutrients and add extra texture. The skin is packed with fiber, vitamins, and antioxidants that enhance the overall health benefits of the salad.
- Organic Kale: We massage the kale to soften its tough leaves and reduce bitterness, making it tender and easy to enjoy.
- Organic Brussels Sprouts: Roasted to perfection, these nutrient-packed veggies are rich in fiber, vitamins, and antioxidants that support digestion and overall health.
- Organic Cauliflower Florets: Fresh or frozen, both work well and provide a good source of fiber, vitamins, and antioxidants.
- Organic Apple: Adds a crisp crunch and natural sweetness that balances the roasted veggies. Honeycrisp is my favorite, but any in-season apple will do.
- Organic Raw Pecans & Pumpkin Seeds: Bring nutty flavor and crunchy texture to every bite.
- Organic Roasted Shallot Dressing: This creamy dressing ties everything together—don’t skip the blending step, as it truly makes all the difference!
- Organic Avocado Oil: My favorite oil for baking since it handles high heat without breaking down.

How to Make
- Quinoa. Cook quinoa according to package instructions. Set aside.
- Roasted Veggies & Shallots. Preheat the oven to 425°F (220°C). Spread the chopped vegetables on a baking sheet, drizzle with avocado oil and seasonings, and toss to coat evenly. Add the shallots and garlic to the same sheet. Roast for 20–25 minutes, flipping halfway through, until tender.
- Kale. Add chopped kale to a large bowl, squeeze in fresh lemon juice, and massage with clean hands for 1–2 minutes until the greens soften and wilt slightly.
- Roasted Shallot Dressing. Transfer the roasted shallots and garlic to a small blender or food processor with the other ingredients and blend until smooth.
- Serve. Divide the massaged kale between bowls, then top with chopped apple, roasted veggies, dressing, pecans, and pumpkin seeds. Enjoy!

Secrets to Creating a Flavor-Packed Vegan Fall Salad
- Use Seasonal Produce: Stick to seasonal fall ingredients to maximize flavor and health benefits.
- Choose Fresh Ingredients: Always go for fresh, organic produce to get the best flavor and nutrition in your salad.
- Massage the Kale Well: Don’t skip massaging the kale—it softens the tough leaves and makes the salad way easier to enjoy.
- Blend the Dressing: You could skip this step, but trust me—you won’t want to. Blending the dressing ingredients creates a rich, creamy texture that takes it to the next level.
- Use Quality Dressing Ingredients: Pick organic extra-virgin olive oil, pure maple syrup, and good-quality mustard for a dressing that really shines.
Storing
This seasonal salad tastes fantastic warm, right after roasting the veggies, but it’s just as delicious chilled once the flavors have blended.
Storing. Keep the salad in an airtight container in the fridge for up to 3–4 days. For best results, store the roasted shallot dressing separately and toss it with the salad just before serving to avoid sogginess.
Reheating. If you like your salad warm, gently reheat the roasted veggies and quinoa in the oven before mixing them back into the salad base. Avoid reheating the whole salad with dressing to keep the textures fresh.
