How to Make
- Crispy BBQ Chickpeas. Preheat the oven to 425 degrees F. Add the drained chickpeas to a baking tray lined with parchment paper. Toss with the avocado oil & seasonings. Bake for 20–25 minutes, tossing halfway.
- Cilantro Coconut Yogurt Sauce. To a high-speed blender, add the sauce ingredients. Blend until smooth & creamy. If needed, add a couple of tablespoons of spring water to achieve your desired consistency.
- Jalapeño Pico de Gallo. Mix together the pico ingredients until well combined.
- Assemble. Divide the cooked cauliflower rice, crispy chickpeas, jalapeño pico, & avocado between bowls. Pair with the cilantro coconut yogurt sauce & fresh cilantro. Enjoy!
