The base is a pretty simple combination of hearty sweet potatoes, protein-rich red lentils, warming + spicy spices, and creamy coconut milk. I love incorporating coconut milk to make this soup extra rich and the touch of pure maple syrup at the end compliments the soup perfectly. If you’re concerned about the soup being too spicy, reduce the cayenne, but the coconut milk truly helps to melow the spiciness. So start with less and you can always add more.
Not only is this creamy soup recipe delicious, but it’s also pretty straightforward to make. All that is required is one pot, a high-speed blender, and your soup is served.
I personally love garnishing the soup with roasted pumpkin seeds, a swirl of coconut milk, & a healthy pinch cayenne. It takes the soup to an extra level of deliciousness. Ingredients
- Organic Onion: A staple for any soup. I used a medium yellow onion, but use what you have on hand!
- Organic Garlic: Make sure to use fresh garlic and not garlic powder. This ingredient is crucial to build flavor.
- Organic Spices: Ceylon cinnamon, nutmeg, cayenne pepper, sea salt, and black pepper, are the spices used to infuse this sweet potato soup recipe.
- Organic Red Lentils: The lentils are the staple for this soup and they’re full of healthy fats + plant-based protein. I don’t recommend substituting for any other color of lentils heere, as they will cook very differently. Oh and be sure to rinse your lentils before adding them to the pot.
- Organic Sweet Potato: For this recipe, I used garnet sweet potatoes, but you can technically use any type of potato you love! I personally leave the skin on, since it adds extra fiber. Just be sure to scrub them well before chopping.
- Organic Unsweetened Full-Fat Coconut Milk: This is essential to make the red lentil soup super creamy, without heavy cream. I don’t recommend subbing for regular non-dairy milk and be sure that your coconut milk comes from a can, not the carton. My favorite brand is Native Forest.
- Organic Low Sodium Vegetable Broth: To thin out the soup, the option to add low sodium vegetable broth is available. I prefer my soups super thick, so I usually don’t add any broth.
- Organic Pure Maple Syrup: Just a splash to amp up the sweetness of the soup.
How To Make
- Sauté. In a large pot, add the chopped onions and cook for 2 – 3 minutes, stirring often. Add the minced garlic and the spices. Cook for another minute.
- Cook. Once the mixture is starting to be fragrant, stir in sweet potato and rinsed lentils. Cook for another 30 seconds. Stir in the coconut milk and broth. Once simmering, reduce heat to medium-low and cook for 20 – 25 minutes, stirring occasionally, until sweet potatoes and lentils are tender.
- Blend. Transfer to a high-speed blender, along with the pure maple syrup, and blend until smooth. Alternatively, use an immersion blender and puree soup until smooth.
- Heat the Soup. If not serving immediately, transfer the soup to a large pot and heat over medium-low. Otherwise, skip and serve.
- Serve. Transfer the soup between bowls. Garnish with roasted pumpkin seeds, a drizzle of coconut milk, and an extra pinch of cayenne pepper. Enjoy!

Ingredients

- 1 yellow onion, chopped

- ½ tsp ceylon cinnamon
- ¼ tsp nutmeg

- 1 (13.5-oz) can organic full-fat coconut milk
- 1 cup low-sodium vegetable broth, optional
- 1 tbsp pure maple syrup
