- The Perfect Sweet Treat to Share: Double this Chocolate Pumpkin Avocado Protein Pudding recipe and share it with your loved ones (they’ll have no clue that it’s made with healthy vegan ingredients).
Ingredients
- Organic Unsweetened Non-Dairy Milk: For best quality always go for homemade or trusted brands to keep your vegan chocolate protein pudding truly clean. My favorites include Three Trees, MALK Organics, and Native Forest.
- Organic Pumpkin Puree: Double-check the ingredients and make sure to grab organic pumpkin puree versus pumpkin pie filling. Farmers Market Foods is my go-to pumpkin puree brand.
- Organic Ground Flax Seeds: These tiny seeds add a boost of fiber, healthy fats, and essential minerals to the pudding. Organic chia seeds would be a great swap if needed.
- Organic Raw Cacao Powder: Full of antioxidants, magnesium, and chocolate goodness, raw cacao powder puts this recipe into dessert status. P.S. Cacao powder is different than cocoa powder. Learn more here!
- Organic Vanilla Plant-Based Protein: A serving not only amps up the protein content of this pudding, but it also keeps you satisfied. To keep your blend truly clean and free from unwanted additives, be sure to read the ingredient label to ensure that you’re nourishing your body with only the good stuff. Refer to this post for the best of the best.
- Organic Pumpkin Spice: An obvious addition to add some cozy fall vibes.
- Organic Medjool Date: Specifically, Joolies pitted Medjool dates are the perfect addition to keep this dessert refined sugar-free (unless your protein powder is chock full of it, so please read the ingredients).
- Organic Avocado: This is what makes the pudding super creamy, and I promise, you can’t taste it whatsoever!
- Organic Homemade Coconut Whipped Cream: The perfect dairy-free dollop, and it truly completes this healthy fall dessert recipe!
How to Make
- Blend the Liquids & Powders. First, add the non-dairy milk, pumpkin puree, and the dry ingredients to a high-speed blender. Blend these ingredients until smooth.
- Blend the Medjool Date(s). Add the soft, pitted Medjool date(s) and blend until there are no date pieces in sight.
- Blend the Avocado. Lastly, add the (fresh or frozen) ripe avocado. Blend until the pudding is creamy but still thick. If it’s too thick for your preference, add a splash of liquid to achieve your desired consistency.
- Serve. Transfer your pumpkin pudding to a chilled glass. Top with a dollop of homemade coconut whipped cream (or your favorite toppings). Enjoy!
Make It Your Own: Optional Add-Ins
This vegan chocolate protein pudding can be made to meet your dietary needs and taste-bud desires! Below are a few options to blend it your way!
- Organic Plain Coconut Yogurt: Enhance the creaminess with a scoop or two of plain coconut yogurt. This addition not only elevates the texture, but it’s also full of probiotics to support digestion.
- Organic Hemp Seeds: Sprinkle in a tablespoon of organic hemp seeds to increase the healthy fats, plant-based protein, and omegas.
- Organic Nut Butters: If you’re feeling nutty, go ahead and include a spoonful of your favorite nut or seed butter to increase the healthy fats and protein.
- Organic Toppings: The list is endless, and you can jazz it up as much as you desire. Some other garnishes that would complement this pumpkin protein dessert include organic cacao nibs, fresh berries, and/or a drizzle of melted dairy-free dark chocolate.
Pull Off the Perfect Pumpkin Pudding Every Time
Listed are my tried-and-true tips to achieve the dreamiest chocolate pumpkin protein dessert with every blend.
- Nail the Consistency: Puddings are meant to be thick, but if your blender is struggling, don’t worry! Pause the blender, remove the lid, scrape down the sides, and blend again. If needed, you can certainly add a bit more liquid. I recommend ¼ cup at a time.
- Blend with the Best: I absolutely love my Vitamix, as their blenders and customer service are top-notch. Plus, their machines come with a tamper, which makes the protein pudding process a lot easier and quicker.
- Soak the Pitted Medjool Date: If your date is on the hard side, please soak it in hot water for 5 minutes. This will help it blend smoother without making a huge mess in your blender. Another tip is to buy pre-pitted Medjool dates so that you don’t have to worry about removing the pit prior to blending.
- Blend with Intention: My go-to blending method (listed in the instructions) ensures that the pudding is truly perfect. Yes, it does require a bit more thought, but it’s worth it!
- Start Slow: Begin blending on low, then slowly increase the speed once the ingredients start to come together.
Storing & Sharing
- Storing: Transfer the pudding, without any toppings, to a glass jar or container with a secured lid. Place in the fridge for up to 2 days.
- Sharing: Double the recipe and share the healthy goodness with your loved one!
