This Chocolate Pecan Pie Protein Pudding is the perfect healthy vegan recipe to blend up this fall. It’s a decadent creation that includes raw pecans, rich cacao, vanilla plant-based protein, a sweet Medjool date, and an avocado for the creamiest pudding consistency. Pecan pie is such a nostalgic holiday dessert, but I thought it was time that it got a healthy vegan upgrade. That’s how this Chocolate Pecan Protein Pudding was invented. It’s perfectly nutty from the raw pecans, rich in cacao, creamy from the avocado (trust me, you can’t taste it), refined sugar-free thanks to the Medjool date, and includes a scoop of vanilla plant-based protein to keep you satisfied.
This clean-eating protein dessert is beyond decadent on its own, but the toppings are what really take it up a notch! I love a dollop of homemade coconut whipped cream, extra pecans, melted dairy-free chocolate, and a pinch of flaky sea salt, but by all means garnish with your go-to’s!
Toppings or not, this protein dessert will be a fall favorite. Oh, and if you’re feeling generous, double the recipe and share with a loved one!

Ingredients
- Organic Unsweetened Non-Dairy Milk: Homemade hemp is my typical go-to, but any variety of unsweetened non-dairy milk works great. If it’s store-bought, double-check the ingredients. Trusted brands that I love are Three Trees, MALK Organic, and Native Forest.
- Organic Raw Pecans: The star of this chocolate protein pudding recipe. They blend right up with other ingredients to amp up the magnesium, fiber, and healthy fats. Please make sure that they’re unsalted and raw to receive all of the yummy benefits.
- Organic Cacao Powder: A healthy serving (or two) of cacao powder makes this healthy holiday dessert super decadent. Just a heads up, cacao powder is different from cocoa powder. Here’s a helpful post!
- Organic Vanilla Plant-Based Protein: For a solid protein boost, extra creamy texture, and vanilla essence. Be sure to use a clean-ingredient protein powder with 20+ grams of protein. Check out this post for recs!
- Organic Medjool Date: Nature’s candy and one of my favorite refined sugar-free sweeteners. Joolies is a great brand, as their quality is always superb! Go for the pitted variety to save your blender!
- Organic Avocado: Yes, it’s totally untraditional, but this is what makes the pudding super creamy and, may I say, fluffy! Fresh or frozen will do.
- Organic Toppings: Totally optional and customizable. Specifically, a dollop of coconut whipped cream (homemade, of course!), extra pecans, melted dairy-free chocolate, and flaky sea salt!

How to Make
- Blend the Liquids & Powders. First, add your unsweetened non-dairy milk of choice along with the dry ingredients to your high-speed blender. Blend until totally smooth.
- Blend the Medjool Date. Add the soft, pitted Medjool date and blend until smooth.
- Blend the Avocado. Finally, add the ripe avocado (fresh or frozen). Blend until smooth and creamy. If needed, you may need to add more liquid to achieve your desired pudding consistency.
- Serve. Transfer your pudding to a chilled glass or bowl, along with your toppings. Dig in and enjoy!

Blend It Your Way: Variations
What is so great about making healthy fall desserts at home is that you can truly make them however you like! Below are just a handful of healthy option add-ins and topping ideas, but feel free to experiment to make your chocolate protein pudding your own!
- Organic Superfoods: A few of my favorites include gelatinized maca powder (I add that to literally every blend), mesquite powder, lucuma powder, and tocotrinols. I have an entire post dedicated to them, so feel free to explore their super amazing benefits here!
- Organic Coconut Yogurt: Enhance the creaminess with a scoop or two of organic plain coconut yogurt. Not only will it level up the consistency, but it also has probiotics to get things moving (if you know what I mean!).
- Organic Caffeine: Need a boost? Use half organic cooled coffee or cold brew and half unsweetened non-dairy milk. I also think a half teaspoon of matcha powder would be a beautiful addition.
- Organic Toppings: This is the fun part! Get as adventurous or as low-key as your sweet tooth desires. Besides my garnishes (listed in the recipe card and throughout the post), some more options to get your creative juices flowing would include fresh berries, cacao nibs, or date syrup!
Pecan Pie Pudding Perfection
To achieve protein pudding success, I’ve included my tried and true tips to nail it every time!
- Adjust the Liquid: If your pudding is struggling to blend, don’t freak! Pause the blender, scrape down the sides, and blend again. If needed, you can add a splash of water or non-dairy milk to get things moving (start with ¼ cup at a time).
- Use a High-Speed Blender: I am a huge fan of Vitamix for exceptional quality (and first-class customer service). Plus, their blenders come with a tamper to get things moving.
- Soak the Pitted Medjool Date: If your date is hard as a rock (it happens), I highly recommend soaking it in warm water for a solid 5 minutes to ensure that it blends smoothly and doesn’t make a mess in your blender. Also, don’t forget to remove the pit, or what I like to do is just buy pitted dates to remove the step/stress.
- Build & Blend: My blending method (included in the instructions) is my go-to way that everything gets blended thoroughly. Yes, it’s a few extra steps, but it ensures success. Also, be sure to start blending on low, then gradually increase the speed for the best consistency.
Storing & Sharing with Others
- Storing: Transfer the pudding, without the toppings, to an airtight glass container. Place in the fridge for up to 2 days.
- Sharing: Simply double the recipe as written and share with loved ones!
