On the other side, toss the fajita vegetables with oil & seasonings. Roast for 20–25 minutes, flipping both sides halfway through for even cooking.
- Cilantro Jalapeño Sauce. In a food processor or high-speed blender, combine all the sauce ingredients. Blend until smooth & creamy.
- Kale. Place the washed and chopped kale in a large bowl. Add the fresh lime juice & massage the leaves with your hands for 1–2 minutes until the kale softens.
- Assemble. Divide the massaged kale and cooked quinoa between bowls. Top with the roasted cauliflower & veggies, then add sliced avocado on top. Finish by drizzling generously with the cilantro jalapeño sauce. Serve & enjoy!

- 1 garlic clove

- 2 tbsp spring water
KALE
- 1 bunch kale, de-stemmed & chopped
- 2 tbsp fresh lime juice
SALAD
- Avocado(s), sliced
