- Roasted Sweet Potato. Preheat the oven to 400 degrees F. On a baking sheet, add the chopped sweet potato. Toss in the oil & seasonings. Transfer to the oven & roast for 20–25 minutes, flipping halfway through.
- Buffalo Sauce. In a bowl, whisk the sauce ingredients together.
- Buffalo Cauliflower Rice. In a skillet, defrost the cauliflower rice. Once defrosted, stir in the buffalo sauce.
- Cashew Cheese. To a high-speed blender, add all of the cashew cheese ingredients. Blend until smooth & creamy. If needed, add more spring water to achieve the desired consistency.
- Assemble. Divide the buffalo cauliflower rice, roasted sweet potatoes, & warm black beans between bowls. Pair with the avocado, a drizzle of the cashew cheese, & a sprinkle of fresh cilantro. Enjoy!

- 3 tbsp nutritional yeast

- ⅛ tsp smoked paprika
- Sea salt & black pepper, to taste
BOWL
- 1 (15-oz) can black beans, warmed
- Avocado(s)
- Fresh cilantro
Instructions
