You’ve probably heard of blackened chicken right?! Okay good, we’re pretty much doing that, but swapping it with cauliflower florets. I know it’s far from traditional, but it’s far from boring. Trust me.
Paired with hearty chickpeas, vibrant veggies, and creamy avocado, this is what I like to call wellness in a bowl.

Ingredients
- Organic Cauliflower: Instead of chicken, we’ll be using cauliflower! Fresh or frozen both work!
- Organic Chickpeas: Chickpeas are loaded with protein and are a great source of fiber.
- Organic Red Cabbage: For some extra vibrancy and vitamins.
- Organic Bell Peppers: I used red and green, but any color combo will work!
- Organic Greens: For the base! Spinach, arugula, kale, or any greens that you have on hand will pair deliciously!
- Organic Avocado: For some healthy fats and creaminess.
- Organic Seasonings: We’ll be coating the cauliflower florets with chili powder, paprika, garlic powder, onion powder, ground cumin, Italian seasoning, sea salt, and black pepper.
How To Make
- Marinate Cauliflower. In a mixing bowl, whisk together the marinade ingredients, then add the cauliflower to the bowl and combine until coated. Let sit for 15 minutes.
- Blackened Cauliflower & Bell Peppers. Preheat the oven to 425 degrees F. On one side of a lined baking sheet, add the marinated cauliflower. On the other side, add the bell peppers and toss with instructed ingredients. Transfer to the oven and roast for 20 – 25 minutes, flipping halfway.
- Assemble. Divide the greens and veggies between bowls. Top the cauliflower, bell peppers, chickpeas and the avocado. Enjoy!
