Why You’ll Keep Coming Back to This Southwest Salad Recipe
- Loaded with Vitamins & Antioxidants: Each ingredient used delivers essential nutrients for overall health.
- Dairy-Free & Allergy-Friendly: The creamy chipotle lime dressing is made without dairy, making it perfect for those with allergies or dietary sensitivities.
- Perfect for Meal Prep: Holds up well in the fridge & tastes great cold or at room temperature.

Ingredients
- Organic Black Beans: Full of healthy fats, fiber, & plant-based protein.
- Organic Sweet Potatoes: The perfect addition to add some heartiness & natural sweetness. Scrub well & leave the skin on, as it adds extra fiber.
- Organic Cherry Tomatoes: Juicy & vibrant, these little bursts of sweetness add a refreshing contrast to the savory elements of the salad.
- Organic Red Onion: Finely chopped red onion provides a sharp, tangy bite.
- Organic Jalapeño: If you love a bit of heat, sliced jalapeño adds a spicy kick, but it can be omitted.
- Organic Avocado: Slice it, dice it, or mash it up into guacamole!
- Organic Cilantro: Fresh cilantro lends a bright, herbal note that lifts the salad and adds a signature Southwest flair.
- Organic Fresh Greens: Use whatever variety you like—spinach, arugula, spring mix, or massaged kale all work.
- Organic Chipotle Lime Dressing: This dairy-free dressing is smoky, creamy, & slightly spicy—essential for bringing all the flavors together. Don’t skip it!
- Organic Avocado Oil: My go-to because it handles high heat well & it doesn’t overpower the potatoes.

How to Make
- Roasted Sweet Potato. Preheat the oven to 425°F (220°C) & line a sheet pan with parchment paper. Toss the sweet potatoes with avocado oil & seasonings. Bake for 20–25 minutes, flipping halfway through, until everything is tender & slightly caramelized.
- Chipotle Lime Dressing. In a mixing bowl, combine all dressing ingredients & whisk until smooth.
- Assemble. Divide fresh greens, black beans, roasted sweet potatoes, cherry tomatoes, red onion, jalapeño, & avocado between bowls. Drizzle with chipotle lime dressing & sprinkle with fresh cilantro on top. Enjoy!

Storing & Reheating

Storing. Transfer the ingredients to airtight glass containers & refrigerate for up to 4 days. To maintain freshness, store the chipotle lime dressing separately & add it just before serving. If possible, keep avocado slices separate & add them fresh each time to avoid browning.
Optional Reheating. This salad is delicious served cold or at room temperature, so reheating is optional. If you prefer warm sweet potatoes & black beans, preheat your oven to 350°F (175°C).
