- Organic Cauliflower Rice: We’ll be using cauliflower rice instead of regular rice. Cauliflower rice isn’t technically rice, but it looks like rice. You can find organic pre-made frozen cauliflower rice at your local health foods store.
- Organic Kale: For the base of our nourish bowl. However, any greens that you have on hand will work!
- Organic Chipotle Crema: It’s super creamy, a tad spicy, & only requires a few ingredients + minutes to whip up!
- Organic Toppings: Sliced avocado & a sprinkle of fresh cilantro, adds some extra healthy fats + nutrients.

How To Make
- Sweet Potatoes. Preheat oven to 425 degrees F. Add the sweet potatoes to a baking tray lined with parchment paper. Toss with the avocado oil & seasonings. Bake for 20 – 25 minutes, flipping halfway.
- Kale. Add the chopped kale to a large mixing bowl along with the lime juice. Massage with clean hands for 1 – 2 minutes to soften the kale.
- Chipotle Crema. In a mixing bowl, stir together the crema ingredients until well combined.
- Assemble. Divide the massaged kale, warm cauliflower rice, roasted sweet potatoes, and black beans, cherry tomatoes, between bowls. Pair with the chipotle crema, sliced avocado, & a sprinkle of fresh cilantro. Enjoy!

- 2 tsp avocado oil
- Sea salt & black pepper, to taste
KALE
- 2 cups kale, chopped
- 1 tbsp fresh lime juice
CHIPOTLE CREAMA
- ½ cup plain coconut yogurt
- 1 tsp chipotle chili powder, plus more to taste
- 1 tbsp fresh lime juice
- 2 garlic cloves, minced
- Sea salt & black pepper, to taste
BOWLS
- 1 (15-oz) can black beans, warmed
- 2 cups cooked cauliflower rice
- Cherry tomatoes, quartered
- Avocado(s), sliced
- Fresh cilantro
Instructions
