This Black Bean & Sweet Potato Mash Fajita Bowl is a vibrant Mexican-inspired dish made with wholesome, plant-based ingredients. It features hearty black beans, a spicy sweet potato mash, cilantro-lime cauliflower rice, sautéed fajita veggies, & creamy avocado. Packed with flavor, this easy vegan dinner is perfect for busy weeknights or healthy meal prep!

Tonight, we’re doing a mashup of two of my all-time favorites: sweet potatoes & Mexican food!
The secret star of this bowl? Sweet potato puree—& trust me, it’s a total game changer. We’re mixing it with creamy tahini (or cashew butter) & a bold mix of Mexican spices for a mash that’s so good, you could eat it on its own (& probably will).
Alongside that dreamy mash, we’ve got protein-rich black beans, authentic fajita veggies, cilantro-lime cauliflower rice, & of course, sliced avocado. The combo is seriously drool-worthy—one of those recipes you’ll find yourself making on repeat!

Ingredients
- Organic Beans: Packed with plant-based protein & healthy fats. I love using organic black beans, but organic pinto beans work just as well.
- Organic Sweet Potato Puree: The base for our spicy sweet potato mash. This is simply pureed sweet potatoes! Farmer’s Market Foods makes a great organic option, or you can easily make your own at home.
- Organic Cauliflower Rice: While not technically rice, cauliflower rice has the perfect texture & appearance. You can find organic pre-made cauliflower rice at most health food stores.
- Organic Red Onion: Often overlooked, red onion is essential for authentic fajitas.
- Organic Bell Peppers: A fajita staple! Feel free to mix & match any colors you like.
- Organic Raw Tahini: Just a couple of tablespoons make the sweet potato mash creamy & smooth. Sometimes I switch it up with organic raw cashew butter—it’s just as smooth & adds a slightly sweeter flavor.
- Organic Spices: Chili powder, ground cumin, chipotle chili powder, sea salt, & black pepper.
- Organic Avocados: No Mexican bowl is complete without creamy avocado—whether sliced, diced, or mashed into guacamole.
- Organic Cilantro: Fresh cilantro adds brightness & that authentic Mexican flavor that you can’t beat!
- Organic Avocado Oil: A neutral-flavored oil that’s ideal for high-heat cooking. It’s perfect for sautéing the fajita vegetables without overpowering their flavor.

How to Make
- Fajitas. Heat a large skillet over medium-high heat. Once hot, add the avocado oil, sliced bell peppers, & red onion. Sauté for 10–15 minutes, stirring frequently, until the veggies are slightly softened & tender. If the pan starts to dry out, add a splash of spring water to keep everything from sticking.
- Cilantro-Lime Cauliflower Rice. In a separate skillet, defrost the cauliflower rice over medium heat. Once heated through, stir in the remaining ingredients.
- Sweet Potato Mash. In a large bowl, combine all the mash ingredients and stir until smooth and creamy. If desired, warm in the oven at 350°F (175°C) for about 10 minutes before serving.
- Serve. Divide the cauliflower rice, sweet potato mash, black beans, & fajita veggies evenly between serving bowls. Top with sliced avocado & a sprinkle of fresh cilantro. Enjoy!

- Organic Raw Tahini: If you haven’t tried tahini yet, you’re missing out! It adds a delicious creaminess to the mash. No tahini? No worries—you can substitute with organic raw cashew butter or skip it altogether. Just keep in mind, without tahini, the mash will be spicier & less creamy.
Storing & Reheating
As shared earlier, this Black Bean & Sweet Potato Mash Fajita Bowl is the ultimate healthy vegan dish for easy leftovers & effortless meal prep!
Storing. Transfer the cooked ingredients to airtight glass containers & refrigerate for 3–4 days. For best freshness, store the components separately & assemble your bowl just before eating. If meal prepping, you can also portion out individual bowls in containers. Avoid adding avocado until you’re ready to serve to keep it fresh.
Reheating. To reheat, preheat the oven to 350°F (175°C). Transfer your fajita bowl ingredients to an oven-safe dish & heat for 10–15 minutes, or until warmed through. Serve with the avocado & enjoy!

- 1 (15-oz) sweet potato puree
- 2 tbsp raw tahini or raw cashew butter
- ½ tsp ground cumin
- ½ tsp chili powder
- ¼–½ tsp chipotle chili powder, to taste

BOWL
- 1 (15-oz) can black beans, warmed
- Avocado(s), sliced
