Buffalo cauliflower florets are totally tasty, but equally as delicious is buffalo cauliflower rice. It’s the same thing, but different & way less complicated to make. Simply defrost the frozen cauliflower rice in a skillet, then coat it in homemade buffalo sauce.
Alongside the spicy buffalo cauliflower rice, the pairings of warm black beans, fresh greens, jalapeño guacamole, & a tangy cashew ranch take the bowl to the next level.

- Organic Jalapeño Guacamole: The key to making the best homemade guacamole is to use a ripe avocado. Feel free to omit the jalapeño if you can’t handle the heat.
- Organic Cashew Ranch Dressing: It’s herby, tangy, & creamy, which makes it the perfect condiment to pair with the bowl.

How to Make
- Buffalo Sauce. In a bowl, whisk the sauce ingredients together.
- Buffalo Cauliflower Rice. In a skillet, defrost the cauliflower rice. Once defrosted, stir in the buffalo sauce.
- Cashew Ranch Dressing. Add all of the ingredients, except the dried dill & parsley, to a high-speed blender. Blend until smooth & creamy. Once blended, stir in the dried dill & parsley.
- Jalapeño Guacamole. In a medium-sized bowl, first mash the ripe avocado by using the back of a fork until the desired texture is achieved. I like mine chunky. Next, stir in the remaining guacamole ingredients.
- Assemble. Divide the fresh greens, buffalo cauliflower rice, warm black beans, & guacamole between bowls. Top with the cashew ranch dressing & fresh cilantro. Enjoy!

- Soak Cashews: Be sure to soak your organic raw cashews in hot water for about 10 minutes to soften them. This ensures that the cashew ranch is creamy & smooth.
Storing & Reheating
As mentioned above, this Black Bean & Buffalo Cauliflower Rice Bowl with Cashew Ranch is the perfect healthy vegan recipe for leftovers & meal prep!
Storing. Transfer ingredients to separate airtight glass containers. The bowl ingredients will last up to 4 days. I don’t recommend preparing the guacamole until it’s ready to be enjoyed.
Reheating. To reheat, preheat the oven to 350 degrees F. Transfer the black beans & buffalo cauliflower rice to an oven-safe bowl. Place in the oven for about 10–15 minutes, until warmed through. To serve, pair with the remaining bowl ingredients.

- 2 tbsp macadamia nut oil
- ½ tsp garlic powder

CASHEW RANCH
- ½ cup raw cashews, soaked in hot water for 10 minutes
- 2 tbsp fresh lemon juice
- 2 tbsp apple cider vinegar
- ½ cup spring water, plus more to thin
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried dill
- 1 tsp dried parsley
- Sea salt & black pepper, to taste
JALAPEÑO GUACAMOLE
- 1 large ripe avocado
- 1 jalapeño, chopped
- 1 tbsp fresh lime juice
- ¼ cup fresh cilantro, chopped
- Sea salt & black pepper, to taste
BOWL
- 1 (15-oz) can black beans, warmed
- Fresh greens of choice
- Fresh cilantro
